That is indeed a lovely microwave. I once put Scotch eggs in the microwave and they exploded when I stuck a fork in them. The whole kitchen was covered in egg, even my face. I have photos somewhere. I suggested to M&S to mention on the packaging they might explode.

🍋🍋Microwave Lemon Curd🍋🍋

1 cup granulated sug

3 eggs

1 cup fresh lemon juice from 5 lemons

zest of 3 lemons

1/2 cup unsalted butter, melted

whisk sugar and eggs thoroughly until smooth then whisk in lemon juice, zest and melted butter.

Cook in the microwave on full power for 3-5 mins stopping to stir after each minute. Once lemon curd coats the back of a spoon, it’s ready.

Remove from the microwave then sieve and pour into a sterile container.

leave to cool to room temperature, cover with a lid.

Will keep in fridge for 2 weeks -ish

80% of the time our microwave is used to heat up a neck wrap that feels like heaven on sore/stiff shoulders.

Popcorn, porridge and heating up milk to add to cafetière coffee or hot chocolate. That's pretty much all I use it for these days. The teens make pitta pizzas and pizza wraps and do a quick final melt of cheese on top of pasta. They also used to make grilled cheese sandwiches, but have taught themselves how to do so (much better) in a frying pan on the stove. Oh, and getting ice cream soft enough to scoop out, is useful too. And when they were little... reheating the morning cuppa about five or six times until I gave up and poured it down the sink!

Porridge! Not better but I’d say it comes out equally as good as on the stove in a pan but without having to face de- gluing the pan afterwards! My porridge is very simple fare, a smidge of salt, bit of oat bran, proper porridge oats ( not quick ones) and water, then microwave for about two minutes depending on the power, take it out, stir it and let it sit for a minute or so, then some cold milk on top, then gobble up and stride out for the moors or seaside 😄

You’re a very nice mum Helen. I lived in a house where my landlady who lived next door would come and microwave fish and it was just a fishy splattered box that I was scared of. But Pie sounds like she’s a microwave aficionado with no fishy ideas. I’d just like to second your plan for a stove top kettle. We have a le creuset one having given up on breaky electric kettles and it’s been 100% lovely and boils faster than an electric one on the induction hob. I look forward to hearing further adventures with the microwave!

Custard! Homemade and creamy - takes 2 minutes. Believe me it’s a life changer. Forget stirring forever on the hob only for it to split or curdle. I have the recipe on my blog if you’d like the link.

I pop some lemon pieces and water in a bowl, pop microwave on for a couple of mins - then quick wipe. Keeps it lovely and clean. Even horrible communal ones.

I couldn’t live without mine, I like my ice cream melty so it always needs a quick zap as I don’t have the patience to wait for it to melt on the side. I need to try pie’s minstrel recipe!

Although i still dont have one😅 seems boiling/blanching veggies is super fast and easy! Then just add seasoning/sauce/dressing and voila! Side dish is done!

I totally get your microwave fear. My dad hates them, so we never had one growing up. Even today, if my parents are staying in a holiday house, the first thing he does is unplug the microwave and hide it in the nearest cupboard 😂 He does consent to letting us use them though! I use ours for melting chocolate (to avoid the faff of doing it over a bowl of hot water), warming milk and steaming green veg (just add a dash of water, cover and zap for 2-3 mins)

Oh I'm with you on this. We have only just had a new kitchen (it took us 7months to build it and still have jobs to do on it). I'd never had a microwave, toaster or dishwasher either.. amd we don't have a dryer either.

But... we have all but the dryer now. I keep forgetting we have the microwave but in the morning I like to use it fir porridge. Mind you I have to stand watching it otherwise if I take my eyes off it for one second you can guarantee it will overflow ALL OVER the insides! It's like The Magic Porridge Pot but less fun cos you have to clean it up!

We’ve only just had a microwave as we’ve moved to Canada and living in a rented house . My daughter used it to make a pretty good Mac and cheese in a mug ! Turns out having one is quite handy :)
